The quantity of vitamin A and D in a pound of good milk fat costs around one-half cent a pound. A concentrate of these vitamins added to a pound of animal and vegetable fat at 10 cents a pound or less, would be nutritively the equivalent of a pound of good milk fat. Mr. FITZPATRICK. Well, you ought to be able to state whether it is generally the opinion of physicians that it is just as nourishing, just as beneficial as butter. Dr. SHEETS. The consumers buy foods on the basis of proteins, carbohydrates, and fats and then fortify them with the other essential substances, as they need them, in many instances upon the advice of a physician or other competent authority. And that is my position with reference to the case in point. It is not a question of economy alone, but it is obtaining, upon the advice of competent authority, what is necessary to supply every essential need of those people; leaving it to the Government departments, who are fully competent and capable, to decide which of the various products will best serve their needs in every case. Mr. FITZPATRICK. Not from an economy standpoint, but from the standpoint of the benefit to the patient? Dr. SHEETS. That is right.
